INGREDIENTS

Salad

1 cup (250 ml) finely chopped broccoli (include pared, tender portions of stems)

1/4 cup (60 ml) finely chopped red pepper

1 tbsp (15 ml) finely chopped sweet white onion

2 tbsp raisins

2 tbsp sunflower seeds, unsalted, plain

bacon bits (optional)


Dressing

1 tbsp (15 ml) light miracle whip salad dressing or mayonnaise

1 tbsp (15 ml) plain low fat yogurt

1 1/2 tsp (7 ml) vinegar

1 tsp (5 ml) sugar



COOKING INSTRUCTIONS

  1. Mix salad ingredients together in small bowl.
  2. Mix dressing ingredients together and combine with salad ingredients.


NOTES

Serves 2.

Per serving: 14 g carbohydrate, 4 g. protein, 5 g total fat, 2.5 g fibre, 192 mg. sodium, 115 calories.

With a red and green theme, this is a colourful salad that is quick and easy to make.

*Omitting the bacon bits would make this a vegetarian dish.
