2 tsp dijon mustard
1 tsp olive oil
1 clove garlic, crushed
1/2 tsp dried basil
1/8 tsp each of salt & pepper
3 small (2 inch) unpeeled red-skinned potatoes, cut into quarters (about 2 1/2 cups)


  1. In plastic bag or shallow bowl, combine mustard, oil, garlic, salt and pepper.
  2. Toss potatoes in mixture, taking care to coat them well.
  3. Lightly spray baking pan with non-stick coating. Place potatoes on pan.
  4. Bake uncovered in 425°F oven for 35 minutes, or until potatoes are tender.


Per serving: 18 g carbohydrate, 3 g. protein, 3 g total fat ( 0 g sat. fat.) 2 g fibre, 119 mg. sodium, 111 calories.

Simple and quick to prepare, yet quite tasty.
