INGREDIENTS

Crust

1 cup all purpose flour
1/2 cup sugar
1/2 cup butter or margarine (hard type)


Topping

1/2 cup sugar
2 tbsp all purpose flour
1/2 tsp baking powder
1/4 tsp of salt
grated zest of 1 lemon
2 tbsp lemon juice (about 1/2 a lemon's worth)
2 large eggs
icing sugar (optional - to garnish)


COOKING INSTRUCTIONS

Crust

  1. In bowl, combine flour and sugar and then cut in butter with pastry blender until mixture resembles fine crumbs.
  2. Press evenly over bottom of lightly greased 8 inch square baking pan.
  3. Preheat oven and bake at 350°F for 15 minutes or until edges begin to brown.
  4. Remove from oven and cool for about 10 minutes.

Topping

  1. In bowl, combine sugar, flour, baking powder, salt and lemon zest.
  2. Beat together the lemon juice and eggs and then stir into sugar mixture until smooth.
  3. Pour over warm crust and bake at 350°F for 15 minutes or until top is set.
  4. Cool in pan.
  5. Sprinkle with icing sugar (if desired) and cut into bars.


NOTES

Yields 18 bars.

These tasty treats are absolutely loaded with both carbohydrates and fats, but they're posted here anyway due to popular demand. Sure to be a hit on any occasion, but if you're watching your weight, avoid them like the plague!
