INGREDIENTS
3 small zucchini, grated (use coarsest grater) |
3 eggs |
6 green onions, chopped |
1/2 cup chopped fresh mint |
1/2 cup chopped fresh dill weed (or 2 tbsp dried) |
1/2 cup chopped fresh parsley |
1/2 cup grated feta cheese |
1/2 cup grated mozzarella cheese (use fine grater) |
1/2 cup all purpose flour |
pinch of cayenne pepper |
3 tbsp butter, divided into 1 tbsp + 2 tbsp |
COOKING INSTRUCTIONS
- Mix zucchini, eggs, green onions, mint, dill, parsley and cheeses together in large bowl.
- Add flour slowly, mixing well. Season with cayenne.
- Grease a 9 inch square baking pan with 1 tbsp of the butter. Pour zucchini mixture into pan and dot the top with remaining butter.
- Bake in preheated oven at 350° until well browned (approx. 45 minutes). Cut into squares.
NOTES
As a main course, makes 4 servings. As a side dish, makes 9 servings.
This is very good recipe. My fussy father gives it a 9/10 for taste, 8/10 for texture, 9/10 for visual appeal and 8/10 for aroma.
