INGREDIENTS

3 small zucchini, grated (use coarsest grater)
3 eggs
6 green onions, chopped
1/2 cup chopped fresh mint
1/2 cup chopped fresh dill weed (or 2 tbsp dried)
1/2 cup chopped fresh parsley
1/2 cup grated feta cheese
1/2 cup grated mozzarella cheese (use fine grater)
1/2 cup all purpose flour
pinch of cayenne pepper
3 tbsp butter, divided into 1 tbsp + 2 tbsp


COOKING INSTRUCTIONS

  1. Mix zucchini, eggs, green onions, mint, dill, parsley and cheeses together in large bowl.
  2. Add flour slowly, mixing well. Season with cayenne.
  3. Grease a 9 inch square baking pan with 1 tbsp of the butter. Pour zucchini mixture into pan and dot the top with remaining butter.
  4. Bake in preheated oven at 350° until well browned (approx. 45 minutes). Cut into squares.


NOTES

As a main course, makes 4 servings. As a side dish, makes 9 servings.

This is very good recipe. My fussy father gives it a 9/10 for taste, 8/10 for texture, 9/10 for visual appeal and 8/10 for aroma.
